Sometimes it is so random and spur of the moment it surprises me. \u00a0Tonight it was because a little Miss brought home some Nan Bread. \u00a0See I really hadn&#8217;t planned on cooking really, maybe a simple pasta for dinner. \u00a0But that one thing the bread, allowed me to connect the dots..<\/p>\n<p>You see I had this Channa Masala spice in the rack for a bit and have yet used it.. which in itself is funny, since when I was in India for 3 months Channa Masala happened to become one of my favorite dishes&#8230; \u00a0So why had I not made this yet? \u00a0 I lacked a certain stimulus perhaps&#8230; and that was it Nan&#8230; \u00a0I could make garlic nan and use the garbanzo&#8217;s for the chana masala, \u00a0and hey there&#8217;s a carrot, a red pepper, an onion, some rice&#8230;.. \u00a0now we&#8217;re cooking&#8230; \u00a0And I&#8217;ve had some lime pickle in the cupboard, that might make my Indian meal a little more authentic&#8230; and a touch of chutney.. why not&#8230; \u00a0 \u00a0 Bamm&#8230;. Indian night on a moments notice&#8230;.<\/p>\n<p>See the only way for Indian night in Aspen Colorado is to have home spun inspiration because as you may have read before with all the great restaurants in Aspen there are no Indian Restaurants at the moment&#8230;. \u00a0There could be a stunning Indian restaurant in Aspen&#8230;. \u00a0It would have to be chic or maybe have a\u00a0sheik\u00a0involved. \u00a0A little nuevo Indian&#8230; \u00a0 \u00a0The Bombay Supper Club.,, excuse me..The Mumbai Supper Club&#8230; \u00a0or the Bangalore Bistro&#8230; \u00a0With beautiful curries, samosas, chapatais, chai, and knowing Aspen a few bang lassis to boot&#8230;&#8230;. \u00a0It would be a hit&#8230;. \u00a0preferably on a rooftop patio in downtown Aspen surrounded by the silhouette of the mountain tops.. There was this great chai walla I met at the Kumba Mela I&#8217;m sure we could find him&#8230; \u00a0And there was this great chef at this one place in Dharmasala.. \u00a0I would just need a few investors&#8230; \u00a0Kevin, Goldy, Jack, what do you think? \u00a0Ahh just the thought of my mythical rooftop Shangri La is great&#8230; but for now, my kitchen will do.<\/p>\n<p>Cheers,,,,,<\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00a0\u00a0 It&#8217;s funny what inspires me to cook a great meal.
