Found slightly downslope from the chaotic skiers on Fanny Hill at Snowmass Mountain, is the tasty tranquility of Nest, a ski in & ski out sushi joint. A very well appointed spot in the new Viceroy Hotel in Snowmass, Colorado.
While the menu has familiar items you’d expect to find in a sushi restaurant like miso soup, edamame, dynamite shrimp, & a spicy tuna roll w/ avocado, Chef Francis Mo’s modern-day L.A. style fusion sushi shines through with unique offerings such as the Creole Roll with crawfish remoulade, cajun spice, cream cheese, & lemon or the Texas Roll with BBQ Beef, wasabi coleslaw, & cracked pepper. The menu also includes specialty dishes like the Thai green papaya salad & noodle bowls as well as some items not so “sushi” like the grilled chicken wrap or teriyaki tuna sandwich. The offerings for the kids are familiar enough for those that won’t go for anything other than chicken fingers with the choice of a Bento box complete with chicken or shrimp tempura. All these goodies have a sweet ending with desserts like the Ginger Creme Brulee with a sweet mango salad accompaniment.
