Openings Winter 2019/20
- Sam’s on Snowmass Mountain restaurant transforms from the Smokehouse to Italian cuisine
- Conca del Sogno was in winter residency at the Chefs Club
- Mix6 opened in Snowmass Base Village
- The Ranch Room is an event space in the former Syzygy space on restaurant row.
- Duemani opened in the former Rustique space.
- Almresi opened in the Dancing Bear as a traditional European Alpine style restaurant.
Opened Fall 2019
- 39° at the W Aspen serves dinner.
- The Living Room at the W Aspen serves breakfast, lunch & dinner.
- The Wet Deck at the W Aspen plans to offer refreshments poolside.
Opened Summer 2019
- Mr. Grey offers a classic seafood shack full dining experience.
- Kirby Ice House opened in the former Bodega space and transforms nightly to the Bumble Lounge. (Closed)
- Park90 + Chef Tom Coohill summer residence at the Chefs Club (Closed)
- Big Munchies opens in the Popcorn Wagon. (closed)
- Tatanka Western Bistro opened in the former Ute City Restaurant space on Aspen’s restaurant row.
- Francesca’s Pasta Market & Empanadas is operating at the AABC
- Oni Aspen opened in shared space of Scarlett’s. (pop up)
Opened Spring 2019
- Union Kitchen Meat & Fish opens in Willits. (Closed Fall 2019)
- 450 Teppanyaki & Sushi opens in Carbondale.
- The Whole Empanada opens in Basalt.
Opened Winter 2018/19
- The Crepe Shack opened in Snowmass Base Village.
- Betula serves French & Pan American cuisine in the former bb’s space.
- The Limelight Lounge debuted in Snowmass at the new Limelight Hotel.
- The Tipsy Trout opened in the Riverside Grill location in Basalt.
- Scarlett’s opened in the former Aspen Kitchen space. (sporadic)
- Sweet Coloradough opens a location in Snowmass Base Village. (closed)
- The Village Tavern opens in Snowmass Center (closed)
- Grub Thai opened in the former Rocky Mt. Chocolate space in Snowmass.
Opened Fall 2018
- CC’s Cafe opened in Basalt’s old Saxy’s Cafe space.
- Starbucks rises again in Aspen on the mall in the Rocky Mt. Chocolate’s vacated space.
- Casa Tequila’s Mexican Restaurant opened an El Jebel location in the former Downvalley Tavern space.
- Franck Thirion Cafe now run by it’s former chef as French Pastry Cafe & More.

- The Gandy Dancer plans to open in historic downtown Glenwood Springs.
