It’s funny what inspires me to cook a great meal. Sometimes it is so random and spur of the moment it surprises me. Tonight it was because a little Miss brought home some Nan Bread. See I really hadn’t planned on cooking really, maybe a simple pasta for dinner. But that one thing the bread, allowed me to connect the dots..
You see I had this Channa Masala spice in the rack for a bit and have yet used it.. which in itself is funny, since when I was in India for 3 months Channa Masala happened to become one of my favorite dishes… So why had I not made this yet? I lacked a certain stimulus perhaps… and that was it Nan… I could make garlic nan and use the garbanzo’s for the chana masala, and hey there’s a carrot, a red pepper, an onion, some rice….. now we’re cooking… And I’ve had some lime pickle in the cupboard, that might make my Indian meal a little more authentic… and a touch of chutney.. why not… Bamm…. Indian night on a moments notice….
See the only way for Indian night in Aspen Colorado is to have home spun inspiration because as you may have read before with all the great restaurants in Aspen there are no Indian Restaurants at the moment…. There could be a stunning Indian restaurant in Aspen…. It would have to be chic or maybe have a sheik involved. A little nuevo Indian… The Bombay Supper Club.,, excuse me..The Mumbai Supper Club… or the Bangalore Bistro… With beautiful curries, samosas, chapatais, chai, and knowing Aspen a few bang lassis to boot……. It would be a hit…. preferably on a rooftop patio in downtown Aspen surrounded by the silhouette of the mountain tops.. There was this great chai walla I met at the Kumba Mela I’m sure we could find him… And there was this great chef at this one place in Dharmasala.. I would just need a few investors… Kevin, Goldy, Jack, what do you think? Ahh just the thought of my mythical rooftop Shangri La is great… but for now, my kitchen will do.
Cheers,,,,,
