Eight K restaurant at Viceroy Snowmass is welcoming a guest chef from Beverly Hill this week to open its chef-exchange program with other Viceroy Hotel Group properties.
Chef Mirko Paderno, of Oliverio Restaurant inside Beverly Hills’ Avalon Hotel, will bring his craft to Snowmass for five dinners starting on Wednesday February 27 and running through Sunday March 3rd. The nightly six-course, wine-pairing prix fixe menu will be available for $150. In addition, a cooking class with Chef Paderno will be held on Saturday at 1 p.m., which is limited to 24 participants, and is available for $75 (or $60 for Very Viceroy Cardholders).
Paderno honed his modern Italian cuisine while at the Cesare Ritz School in Merano, Italy, before working under renowned Chef Sergio Mei at the Four Seasons Hotel in Milan. After departing the Four Seasons, he took a position as the executive chef at Primi in Los Angeles, before continuing on to other notable L.A. Italian eateries like Celstino Drago, Dolce, Cecconi’s, and All’ Angelo. From there, he embarked on his latest venture: developing and launching Oliverio inside Viceroy Hotel Group’s Avalon Hotel.
Eight K chef Will Nolan will be working alongside Paderno and said he is looking forward to picking up some of his techniques. Nolan’s normal full menu of Southern-tinged cuisine will be available during the exchange. Nolan himself will likely visit other Viceroy properties in the future as part of the program.
