David Burke Kitchen Plans to Open in Aspen, Colorado
Renowned Celebrity Chef David Burke Brings Signature Farm-to-Table Fare to Historic Downtown Aspen
Aspen, CO—November 6, 2013— Sometime in 2015?, David Burke Group hopes to debut the David Burke Kitchen, a contemporary farm-to-table restaurant in the heart of historic downtown Aspen. Led by Executive Chef Matthew O’Neill, David Burke Kitchen showcases Chef Burke’s classic style of cooking featuring all American sourced ingredients with items sourced from Colorado along with an inspired beverage program and hand-crafted cocktails.
Located in the heart of the Aspen core and designed by Chicago’s 555 Design, David Burke Kitchen features a warm interior with rich leather stools, farmhouse tables and custom cabinetry along with an exhibition kitchen and expansive bar. The outdoor terrace overlooking Aspen mountain and downtown offers breathtaking views which is perfect for après ski cocktails, or lingering over lunch.
Open for lunch, and dinner daily, with Sunday brunch on the weekends, emblematic dishes at David Burke Kitchen include Peanut Butter Maple Bacon Dates with fried grapes; Potted Duck & Foie Gras with citrus-maple glaze; Short Ribs with wild mushroom, cavatelli, and black truffle mousse; and Roast Chicken for Two with sage stuffing, butternut squash, and roasted brussels. Signature items such as; Elk Tartar, Wood Oven Pizza, David Burke’s Dry-Aged Patented Beef from the aging vault, Pretzel Crusted Crab Cakes and his Cheesecake Lollipops will be show stoppers. Featured brunch items include “Legs & Eggs,” with two poached eggs, fried chicken, cheddar grits and a biscuit, Ostrich Egg Lobster Scramble and Pumpkin Spice French Toast with pecans and cream cheese.

As the executive chef of David Burke Kitchen Aspen, Matthew O’Neill brings to his position a decade of experience working in some of the nation’s best restaurants, most recently as executive chef at the Ajax Tavern located in Aspen’s iconic Little Nell hotel. O’Neill has also worked alongside Tony Maws at Boston’s celebrated Craigie On Main and at Daniel Boulud’s Bar Boulud and Restaurant Daniel, both in New York City.
