A fire-roasted feast, top chefs and more, Friday, June 19

Snowmass Village, Colo. – Traditional outdoor cooking over live fire goes to extremes as Cochon 555’s Heritage Fire culinary extravaganza makes its Colorado debut in Snowmass on Friday night, June 19, during the Food & Wine Classic Weekend.  A partner event to Grand Cochon, which will take place the following night at Viceroy Snowmass, Heritage Fire showcases over 55 top local and national chefs, farmers and butchers working together to spotlight traditional outdoor cooking techniques. Over 3,000 pounds of heritage breed animals, such as cow, pig, lamb and goat, as well as duck, chicken, lobster, oysters and heirloom vegetables, will be spit-roasted or cooked over live wood fires on the Lawn and Hill at Base Village.

Participating chefs include Matt Accordion of SPQR in San Francisco, Jim Butchart of Elk Camp in Aspen, Mark Fischer of Town in Carbondale, Ray Garcia of Broken Spanish in L.A., Mike Isabella of Graffiato in D.C., Alex Seidel of Fruition in Denver, Richard Sandoval of Richard Sandoval Restaurants and Kelly Whitaker of Basta in Boulder. The gourmet feast also features notable wines, craft beers, crisp ciders and top spirits.

“Our live-fire event lets guests experience and taste food cooked with primal techniques, drawing out new levels of interest and culinary enthusiasm about every species of farmer raised animals,” said Brady Lowe of Atlanta-based Taste Network and creator of the Cochon 555 concept. “Heritage Fire has been Napa Valley’s cult, premier culinary event for over six years. We’re looking forward to partnering with Snowmass Tourism to bring it to Snowmass.”

Together with Grand Cochon, Snowmass will sizzle all weekend long. It’s great addition to our Snowmassive Summer.”

Since its launch in 2009, Cochon 555 and its programs have supported responsible family farming across the country by allowing 50,000 people to taste heritage pigs and by donating more than $400,000 to charities and more than $500,000 directly to farmers across the country. “Cochon has played a large role in the national education of heritage breed pigs raised by American family farms and the importance of supporting local food,” said Lowe. “One whole animal at a time.”
