"Chef Daisuke Nakazawa Co-owner of Bedford Street Hospitality and Sushi Nakazawa, the Tokyo born chef/restaurateur Daisuke Nakazawa opened his eponymous, Sushi Nakazawa, with his partner, Alessandro Borgognone, in Manhattan's West Village neighborhood in 2013. The restaurant, which received a perfect four stars from The New York Times, serves his omakase, which he lovingly refers to as “New York-mae†sushi. Four years later, Sushi Nakazawa opened in the Old Post Office in Washington, DC. Both locations of Sushi Nakazawa have since been awarded one Michelin star each.  Nakazawa got his start at Yoshi Sushi before becoming a fishmonger at Tokyo's prestigious Tsukiji Fish Market, the world's largest fish market. From there he apprenticed at the three Michelin-starred restaurant Jiro, with world famous Jiro Ono in 2001. Considered one of the best sushi chefs in the world, Nakazawa trained under Jiro for more than 11 years, during which time he appeared in the Netflix documentary "Jiro Dreams of Sushi" which was the official selection of New York Cityâ eca Film Festival in 2011.
Shortly after the film's release in 2012, Nakazawa relocated to Seattle, WA, working closely with Shiro Kashiba, another disciple of Jiro. It was here that he developed his own style and adapted to western fish, while continuing to honor the tradition of the Edomae-style and history."
