Tatanka Western Bistro is a new restaurant in Aspen, Colorado opened mid summer 2019 on Aspen's restaurant row as a bistro with a Mexican-Western flair.

Tatanka Western Bistro is a modern take on a traditional Old West saloon, elevated for Aspen. Our menus and design are elegant yet informal, simple and warm with interesting textures and unexpected touches. Offering breakfast, lunch and dinner daily, our menu is crafted by acclaimed chef James Mazzio. Inspired by the culinary traditions of Santa Fe, Oaxaca, and Mexico City, we have fused traditional bistro offerings with the flavors of the Southwest to present a truly TATANKA take on dining. To compliment our cuisine, we have curated a wonderful wine list and creative cocktail program to wet your whistle. We are Local, sustainable and committed to ethical production and transparency. Our menu is as diverse as the West, and we strive to truly provide something for every palate, as well as a welcoming atmosphere for all to enjoy. 

Need to Know Reservations available for dinner 30 days in advance. Walk-Ins are always welcome for breakfast, lunch, and dinner and a portion of our dining room and the bar will be reserved for Walk-Ins nightly. Please contact Tatanka directly for parties greater than six if you would like to make a reservation. We accept reservations at breakfast and lunch for parties larger than six; please contact us directly to make arrangements. Should you be running late, please call ahead and let us know. We will try our best to hold your table as long as possible, but cannot guarantee seating for parties that are 15 minutes late or more. We accept guests to our waitlist in person only. We are located in downtown Aspen on the famous Restaurant Row, walking distance from most area lodging. Paid street parking is available. Aspen charges for parking between 10 AM to 6 PM, Monday thru Saturday. Parking is free after 6pm and on Sundays.
